MAIN MEALS – Lemon Chicken Parcels
Ingredients
4-6 Chicken Breast Fillets
1Tbsp Lemon Juice
Salt
200g Fresh Green Beans
4 Bacon Rashers
5 Small Potatoes
3 Carrots
1 Litre Water
* Dairy Free
* Egg Free
* Gluten Free
* Varoma
Directions
> Sprinkle lemon juice & salt over chicken breasts.
> Wrap chicken in individual foil parcels.
> Place sealed parcels in Varoma dish.
> Wrap half green beans with bacon rasher, repeat with other half.
> Place in Varoma with chicken.
> Peel & cut potatoes in chunks & place in internal steaming basket.
> Peel & cut carrots into long strips & place in Varoma tray.
> Place water in bowl, assemble steaming basket & Varoma, & cook for 30 minutes. on Varoma temperature, Speed 3.
SALADS & VEGETABLES – Sweet Potato Mash
Ingredients
800g Sweet Potato
40g Butter
100g Chicken Stock
1 Tbsp Vegetable Stock Paste
* Gluten Free
* Egg Free
Directions
> Peel & chop sweet potato.
> Place in bowl & chop for 10 seconds, Speed 5.
> Add remaining ingredients
> Cook for 15 minutes, 100 degrees Celsius, Speed 1-2.
> When cooked & mushy, slowly turn speed dial up to speed 8 until smooth.
> Place into serving bowl.
CAKES & BISCUITS – Raspberry & Almond Teacake
Ingredients
20g Butter, Soft
110g Sugar
2 Eggs
130g Milk
150g Plain Flour
1 1/4 tsp Baking Powder
Pinch Salt
130g Frozen Raspberries
Flaked Almonds
Directions
>Preheat oven to 200C.
> Grease a 28 x 17cm tin, & line with paper.
> Cream butter & sugar in bowl until light, on Speed 4.
> Add eggs & mix.
> Add milk, then flour, baking powder & salt. Mix together 10 seconds, Speed 4.
> Add raspberries. Mix on REVERSE, Speed 1 until mixed through. Take care berries do not break up too much – stir through with spatula if necessary.
> Pour into tin.
> Scatter almonds over top.
> Bake 30 minutes.
